NOTES - 100% Gamay from organically cultivated 40-60 year-old vines planted in the clay/flinty soils of the Loire's sub-valley, the Cher. Grapes are hand-harvested, macerate for 10-12 days in whole-clusters prior to pressing. Spontaneously fermented and aged in concrete tanks for 6-9 months before being bottled unfined, unfiltered, minimal (<20ppm) added SO2.
