NOTES- The Goisot family has long been a benchmark in the Auxerre region, just southwest of Chablis. Their Aligoté comes from biodynamically farmed limestone soils, giving it tension and depth. Hand-harvested and fermented with native yeasts, it sees aging in tank to preserve freshness. A serious take on Aligoté that stands apart from the simple bistro style.
