I Custodi, Aedes, Etna Bianco 2022

NOTES - Bright, fresh, and ready to drink, I Custodi’s classic Etna Bianco is 100% Carricante, grown on 10-year-old bush vines in Mt. Enta’s signature mineral-rich, volcanic soil. After traditional native yeast fermentation, this wine is aged exclusively in stainless steel, which brings a refreshing luminosity to an otherwise quite textural white. White oleander aromas and a walk through ripe stone fruit orchards offset subtle herbaceous, anise notes. Backed by creamy acidity and minerality with a touch of ocean spray, the palate brings green olive, green apple skin, and a slightly bitter almond finish. Pairs well with anything from the sea, particularly grilled octopus coated in lemon, parsley, and EVOO.
