A rising star in the Loire Valley, Jérémy Quastana trained under Marcel Lapierre and Olivier Lemasson before carving out his own path in Loir-et-Cher, near Cheverny. In just four vintages, he’s proven his skill in crafting clean, highly drinkable wines with minimal intervention.

‘Dédale’ is a zero-zero Pinot Noir, bursting with macerated cherries, strawberry yogurt, African violets, and cinnamon. Unfined, unfiltered, and with no added SO², it’s ultralight, ultra-bright, and best enjoyed with a slight chill. Jérémy is only getting better—this is a bottle worth seeking out.
