La Boutanche, Thomas Santamaria NV (1 LITER)

NOTES - A wild, red Corsican wine made by Thomas Santamaria in Patrimonio. He is the 6th generation to take over the estate and works biodynamically, following the lunar cycle. This wine is made from all destemmed Grenache with a splash of Niellucciu added for lift. Fermented in stainless steel with a short elévage in tank brings freshness and lip-smacking acidity.
