NOTES - 100% Gewürztraminer from St. Hippolyte, Alsace. Grapes are hand-harvested prior to carbonically macerating + spontaneously fermenting for 12 days in stainless steel tank. Wine is pressed to foudre and stainless steel tank for 9 month élevage prior to bottling unfined, unfiltered, no additional SO2.
